Celebrate Prosecco Week with the Elegant 2021 Fiol Prosecco Rosé

Prosecco Week (June 24-30) is a vibrant celebration dedicated to the world’s most popular sparkling wine by sales volume.

Originating in the Veneto and Friuli-Venezia-Giulia region in northeastern Italy, Prosecco is made primarily from the Glera grape, which is know for its light, fruit and floral characteristics.

The production process involves the Charmat (a.k.a Martinotti) method, where the secondary fermentation occurs in large stainless steel tanks (see below), preserving the wine’s fresh and vibrant qualities. This method results in Prosecco’s signature effervescence and approachable ripe fresh fruit flavors, making it a favorite for celebrations and everyday enjoyment alike.

In honor of this sparkling celebration, I’m excited to introduce you to the 2021 Fiol Prosecco Rosé. This elegant wine perfectly embodies the festive spirit of Prosecco Week with its delicate bubbles, striking pink hue, and a flavor profile that is both refreshing and sophisticated.

About Prosecco Rosé

Rosé Prosecco is a relatively recent addition to the sparkling wine market. It combines Glera grapes with a small percentage of Pinot Nero (a.k.a. Pinot Noir) to create a pink hue and distinctive aroma/flavor profile. It was officially permitted in 2020 after the Italian Government and the Prosecco DOC Consortium following years of experimentation. All Rosé Prosecco are required to be vintage dated and undergo a minimum of 60 day secondary fermentation tank.

2021 Fiol Prosecco Rosé

FIOL’s founders, Gian Luca Passi and Giovanni Ciani Bassetti, grew up surrounded by Prosecco in the Treviso district. As childhood friends, they worked harvests and enjoyed their first watered-down tastes of Prosecco at family dinners.

Their careers eventually took them around the globe, where they honed skills in business and marketing. In 2011, they reunited to found FIOL. Gian Luca, based in New York, brings top-notch PR expertise from his time with Giorgio Armani and Moncler. Giovanni, leveraging his JP Morgan experience, joined FIOL full-time in 2019.

Recently, Alex Ouziel, with over 20 years in wine and spirits marketing, joined as CEO. The entry of U.S. investors in 2020 has provided FIOL with the resources to expand, especially in the U.S.

Furthermore, FIOL’s production is overseen by the renowned enologist Marzio Pol, often hailed as the “winemaker’s winemaker.” With a career spanning over 30 years and nearly 50 harvests, Pol has lent his expertise to some of Italy’s most prestigious wineries, ensuring exceptional quality in every bottle of FIOL Prosecco.

2021 Fiol Prosecco Rosé – Extra Dry

Tasting Notes:

This wine is a blend of 85% Glera and 15 % Pinot Nero that underwent, at least, the minimum 60 day secondary fermentation

The wine pours a beautiful ballet slipper pink with enticing strawberry, raspberry, kumquat zest and white floral aromas. On the palate the wine is medium-bodied with refreshing, zesty acidity and a delicate creamy mousse with fresh ripe strawberry, raspberry, pear flavors accented kumquat zest, and a satisfying finish with an appealing hint of salinity. Residual Sugar – 13 g/L residual (Extra-dry) 11% abv|SRP – $22

I thoroughly enjoyed this wine! Beyond being absolutely delicious and balanced, it stands out as a true gastronomic wine—perfect for pairing with food. Its ripe fruit flavors and acidity make it an excellent choice not only as an aperitif but also for everyday meals and special occasions. The subtle hint of sweetness adds to its versatility, and being a rosé, it pairs wonderfully with an even wider range of dishes, from light salads to richer entrees.
