According to Karen MacNeil‘s The Wine Bible:

Describes a multifaceted wine with compelling nuances and character 

In other words, complex refers to a wine that is multi-layered in terms of aromas and flavors.  It’s a wine that holds your interest because as you smell it and taste it, it offers a variety of subtle aromas and flavors that you pick up on when you take that second, or third sniff or taste.
